7 pounds zucchini, sliced. Mix 2 cups pickling lime in 2 gallons water. Put zucchini in lime water, cover and let soak 24 hours. Remove from lime water and rinse until all lime is removed. Put zucchini in large container and cover with water; soak 3 hours. Remove zucchini and drain.
Mix: 2 qt. vinegar 1 tbsp. salt
Stir until mixed over heat, add: 1 tbsp. pickling spice 1 tbsp. celery seed
Pour over zucchini. Let stand overnight. Next morning put in larger cooker, cook over medium heat for 35 minutes. Put zucchini in jars, pouring hot liquid over zucchinis. Seal.
