PICKLED ZUCCHINI 
8 c. zucchini
2 lg. onions
1 green pepper
1 red pepper
1 c. vinegar
1 3/4 c. sugar
1 tsp. celery seed
1 tsp. mustard seed
1 tbsp. salt

Dice zucchini, onions, and peppers. Sprinkle with 1 tablespoon salt. Let stand for 2 hours. Bring to a boil vinegar, sugar, celery seed, mustard seed. Drain zucchini. When brine starts to boil, put drained zucchini in. Boil for 12 minutes, stir occasionally. Let cool. Put in large jar or jars. Keep in refrigerator. Will keep a long time.
