PERSIMMON OATMEAL COOKIES 
3/4 c. butter
1 1/2 c. sugar
2 eggs
1 c. persimmon pulp
1 tsp. baking soda
1 tsp. vanilla
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. cinnamon
1/2 c. coconut
1/2 c. chopped nuts
1 1/2 c. quick rolled oats

Cream together butter and sugar. Beat in eggs. Stir soda into persimmon pulp and add to creamed mixture. Add vanilla and sifted dry ingredients. Mix well. Stir in rolled oats, coconut and nuts. Drop by teaspoonful onto greased baking sheets. Bake at 375 degrees about 12 to 15 minutes. Makes about 6 dozen cookies.
