SAUCE PAN APPLE SQUARES
1 c. sifted all purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 c. (1/2 stick) butter
1/2 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1/2 c. chopped pared cooking apples (I use more)
1/2 c. chopped walnuts
Cinnamon sugar

Sift flour, baking powder, salt and cinnamon onto waxed paper. Melt butter in a medium sized sauce pan over moderate heat; remove from heat. Beat in sugar, egg and vanilla with a wooden spoon until smooth. Stir in flour mixture, apples and walnuts until thoroughly combined. Spread into a greased 8 x 8 x 2 inch pan. Sprinkle with 1 tablespoon of the cinnamon sugar mixture. Bake at 350 degrees for 30 minutes, cool and cut into squares. For cinnamon sugar mixture, combine 1/2 cup granulated sugar and 1 1/2 teaspoons cinnamon. Blueberries can be used instead of apples.
