CRUSTLESS QUICHE 
2 tsp. butter
1/4 c. chopped scallions
1/2 c. evaporated skim milk
2 beaten eggs
2 oz. shredded cheese
1 c. chopped cooked vegetables
2 oz. chopped ham
Salt & pepper

Preheat oven to 375 degrees. In small skillet heat 1 teaspoon butter until bubbly, add scallions and saute until softened. In a small bowl, combine scallions with milk, eggs, 1 ounce cheese, vegetables, meat, salt and pepper.

Grease a 7 inch pie plate with remaining butter and pour in egg mixture; sprinkle with remaining cheese and bake for 30-35 minutes. Serves 2. (Use different vegetables, i.e., broccoli, mushrooms, asparagus; and different meats or crab or lobster.)
