CRUSTLESS CRAB QUICHE 
4 oz. thawed & thoroughly drained frozen crabmeat, flaked
4 oz. cheddar cheese, shredded
1/4 c. chopped scallions (green onions)
4 eggs
1 c. evaporated skimmed milk
1/2 tsp. salt
1/2 tsp. powdered mustard
1/8 tsp. pepper
Dash paprika

Preheat oven to 400 degrees. Spray 8 inch glass pie plate with non-stick cooking spray; set aside. In medium bowl, combine crabmeat, cheese and scallions; using back of spoon, press crabmeat mixture over bottom and up sides of sprayed pie plate.

Using a wire whisk, in medium mixing bowl beat together eggs, milk, salt, mustard and pepper; pour over crabmeat mixture. Sprinkle with paprika and bake until set, about 30 minutes. Remove from oven and let stand for 5 minutes before serving. Makes 4 servings.
