CHEESY VEGETABLE CASSEROLE 
2 (10 oz.) pkg. frozen mixed vegetables
1 c. chopped celery
1/3 c. chopped onion
1 c. mayonnaise
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. sharp Cheddar cheese, grated

Cook frozen vegetables according to package directions; drain well. Combine cooked vegetables, celery, onion, mayonnaise, 1/2 cup cheese, salt and pepper. Spoon into a greased 2 quart casserole.

TOPPING:

2 c. bite-sized Cheddar cheese crackers, crushed
1/4 c. butter, melted
1/2 c. shredded sharp cheese

Mix and sprinkle over top of casserole. Bake at 300 degrees for 30-40 minutes.
