CALIFORNIA WALNUT BREAD 
3 c. all purpose flour
1 c. sugar
1 1/2 c. coarsely chopped, toasted walnuts, divided
1 egg, beaten
1 1/2 c. milk
1/2 tsp. salt
4 tsp. baking powder
1/4 c. soft shortening
1 tsp. walnut extract

Sift flour with sugar, baking powder and salt into mixing bowl. Stir in 1 1/4 cups of the walnuts. Add egg, shortening, milk, and walnut flavoring. Mix only until ingredients are blended. Turn into a greased 9-inch loaf pan. Sprinkle remaining 1/4 cup of walnuts over top. Bake at 350 degrees for 60-70 minutes. Let loaf stand in pan for 10 minutes, then turn out onto wire rack to cool.
