BASIC ESCOVICH FISH (V-D) 
6-8 pieces of fish (any type of fish can be used)
1/2 c. water
2 tbsp. oil (oil from frying fish)
1 oz. vinegar
1 lg. hot (red) pepper
2 lg. onions

Heat oil in large skillet. Place fish in hot oil. Fry until brown on both sides. Remove each piece of fish as it is done to prevent burning. Place fish in a covered dish.

In a separate saucepan, add water, vinegar, onions, pimento seeds, pepper and 2 tablespoons of oil. Cook on low flame 4-5 minutes to allow onions to help cook. Remove from heat. Pour contents over fish. Cover for 2-3 hours, then serve.
