SURPRISE CUPCAKES 
1 1/2 c. sifted flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1 c. water
1/3 c. cooking oil
1 tbsp. vinegar
1 tsp. vanilla

FILLING:

8 oz. cream cheese
1/3 c. sugar
1 egg
1/8 tsp. salt
Squirt of lemon juice
1 c. chocolate chips

Sift dry ingredients. Add water, oil, vinegar and vanilla. Beat until combined. Line muffin tins with baking cups and fill cups 1/3 full.

Combine first 5 ingredients. Beat well. Add chocolate chips. Drop a heaping tablespoon of filling mixture in each baking cup. Bake at 350 degrees for 30 to 35 minutes.
