POTATO BALLS 
Instant mashed potatoes
Sour cream
1/2 tsp. oregano
1 tbsp. grated Parmesan
1/4 c. bread crumbs
2 tbsp. oil (optional)

Prepare instant potato mix as directed for 4 persons, substituting sour cream for the milk and butter. Stir in oregano and Parmesan. Chill 20 minutes.

Shape potatoes into 8 balls and coat with bread crumbs. Place on cookie sheet. Drizzle with oil. Bake in pre-heated 375 degree oven 10-15 minutes.
