POPEYE'S FISH 
Fish, such as dolphin, snapper or grouper, are perfect for this recipe. Use fillets.

In a microwaveable container with at least 1 1/2 inch sides, arrange 3 or 4 generous fillets, thick side out, salt and pepper the fish, add the juice of 1/2 a good sized lime, a little white wine, an ounce or 2 is optional.

Defrost a container of frozen chopped spinach. Mix mustard (such as Dijon or Grey Poupon), about a tablespoon to 3 or 4 of mayonnaise to taste. Enough to generously coat the fish area to a depth of about 1/8 inch. Probably 12 generous tablespoons.

Spread the chopped spinach evenly over the fish and top with an even layer of the mustard/mayonnaise. Cover with plastic wrap, punch a few steam holes and microwave as per recommended time for that amount of fish. Microwave energy varies but perhaps 6 to 8 minutes on high.

Remove the plastic wrap and brown under a broiler for 3 to 5 minutes depending on distance to food. Let sit for 5 minutes and enjoy Popeye's favorite fish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
