POPEYE'S POTATO SOUP 
9 oz. pkg. frozen chopped spinach, thawed and drained
1/4 c. butter
1/4 c. flour
5 1/2 c. milk
2/3 c. mashed potato flakes
2 tbsp. chopped onion
1 c. shredded Cheddar cheese
1 c. cooked, diced ham

Blot excess moisture from spinach with paper towel. In large saucepan over medium heat, melt butter and stir in flour, mixing until smooth and bubbly. Gradually add milk, potato flakes, and onion. Cook until mixture is slightly thick. Add spinach, cheese, and ham. Cook, stirring constantly, until cheese melts and all ingredients are heated through.
