MINCEMEAT PUT DOWN FOR WINTER 
1 1/2 qt. cooked beef, chopped
2 qts. water
6 qts. apples, chopped
1 qt. suet, chopped
4 c. brown sugar
1 (15 oz.) pkg. raisins
1 (11 oz.) pkg. currants
2 qt. gooseberries
2 cans cherries
1/2 lb. candied citron, chopped
Rind of 2 oranges, grated
2 oranges, chopped
1/2 c. vinegar or cider
4 tsp. cinnamon
1 tsp. ground cloves
2 tsp. nutmeg

Use a canning kettle, mix all ingredients and put in a 300 degree oven. Stir often and cook until apples are softened and top is juicy. Oven cooking prevents sticking. More apples may be added, if you like. Seal in 8-quart sterile jars.
