BLACKENED FISH 
1 tbsp. sweet paprika
2 1/2 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. cayenne pepper
3/4 tsp. white pepper
1/2 tsp. dry thyme
1/2 tsp. dried oregano

Heat black skillet for at least 10 minutes until very HOT! Melt 3 sticks unsalted butter, dip fish fillets into butter. Place in skillet, sprinkle seasoning on liberally and pour 1 teaspoon butter on top of each filling.

Cook until one side is charred (about 2 minutes), turn over, pour 1 teaspoon butter on each fillet, cook about 2 more minutes. Serve with melted butter.
