BLACKENED FISH 
1/2 tsp. onion powder
1/2 tsp. garlic salt
1/2 tsp. ground red pepper
1/2 tsp. dried basil
1/4 tsp. ground white pepper
1/4 tsp. dried thyme, crushed
1/2 tsp. pepper
1/8 tsp. ground sage
1/4 c. butter

Mix together dry ingredients; pat on fish. Heat cast iron pan in a gas grill. Fry fish with butter 2 1/2 to 3 minutes until blackened.
