BRAISED LIVER AND VEGETABLES 
1 lb. beef liver
1/8 lb. bacon
1 sliced onion
1/4 c. diced celery
2 c. tomatoes (canned)
1 1/2 tsp. flour
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. melted fat
2 carrots, sliced
1/2 bay leaf

Cut liver in 2-inch square pieces. Dip in flour and fry until brown. Put in casserole dish. Brown onion, celery, carrots, and bacon. Add to casserole. Add remaining ingredients and mix. Cover tightly and cook in 350 degree oven for 1 1/2-2 hours. Serves 6.
