Serves 20. 1 qt. sour cream 2 (8 oz.) pkgs. cream cheese Pineapple juice or other fruit juice to thin consistency
Use electric mixer to blend well; pour in quart jars. Refrigerate overnight. Use juice to thin to consistency needed. For pouring over fruit, this should be pourable. If this dressing will be used for a dip (fruit), consistency should be thicker, as dip.
Layer green on dish; pile fruit, cubed pineapple, and orange pieces (fresh). Cover with dressing. Top with peanuts. This is called mandarin salad.
