JIM'S CHOCOLATE CHIP & BANANA MUFFINS | |
1/2 cup (1 stick) butter, at room temperature 1 cup sugar 2 eggs 1 tsp. banana extract 6 oz. banana cream pie flavor yogurt (Yoplait or Chobani) 2 cups all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 2 ripe bananas (cut into 1 or 2-inch pieces) 1 cup chocolate chip morsels 1 1/2 cups chopped pecans or walnuts (optional) Preheat oven to 350°F. Grease muffin pan and set aside. In a mixing bowl, cream together butter and sugar until it becomes light and fluffy. Add eggs and beat again. Add the banana extract and yogurt. Combine the dry ingredients together and add half to batter and beat. Add cut up pieces of bananas and remaining dry ingredients and beat for another minute. Stir in 1 cup of chocolate chip morsels and add chopped nuts (if using). Fill muffin cups half way. Bake at 350°F degrees until toothpick inserted in center comes out clean (usually about 14-18 minutes depending on your oven). Submitted by: Jim P. |
