RANCHO SCRAMBLE 
6 slices bacon
2 tsp. minced onion
1-1 1/2 c. grated raw potato
6-9 eggs (depending on number served)
1/2 tsp. salt
Dash pepper

Fry bacon until crisp. Drain and crumble. Pour off all drippings except 1 tablespoon. Lightly brown onion in this 1 tablespoon drippings. Add potato and fry until tender. Beat eggs lightly with salt and pepper. Add to skillet. Stir mixture until eggs are done. Sprinkle with crumbled bacon just before serving. Serves 6-9 people.
