LIZ'S SEAFOOD FETTUCINI | |
2 sticks butter 2 onions, chopped 2 ribs celery, chopped 1 bell pepper, chopped 1/2 c. flour 4 tbsp. parsley 2 lbs. shrimp, crabmeat or crawfish or a combination 2 c. half & half 1 lb. Velveeta cheese, cubed or shredded 2 tbsp. fresh jalapeno peppers (optional) 3 cloves garlic, minced Salt and pepper to taste 1 lb. fettucini, cooked and drained Melt butter in a heavy, large saucepan. Saute vegetables until transparent. Add the flour. It must be a little thick. Stir and cook for 15 minutes. Add parsley and seafood and cook for 20 more minutes, gently stirring. Add cream, cheese and jalapeno peppers and garlic and blend well. Season with salt and cayenne pepper and cook 20 minutes. Add fettucini and gently toss. Cook together for about 10 minutes until everything is warm enough. Sprinkle with Parmesan cheese. Enjoy! |
