CHICKEN AND BLUE CHEESE 
2 c. chicken or turkey chunks
2 c. toasted bread, cubed
2 c. cream of celery soup (1 can soup; 1 can milk)
1/2 c. green peppers, chopped
1/4 to 1/2 c. blue cheese, crumbled

Cook chicken, soup and peppers for 10 minutes or longer, if using uncooked chicken. Butter casserole and put toast cubes on bottom; pour over chicken mix and sprinkle blue cheese on top. Dot with butter. Can be frozen at this stage.

Bake in 350 degree oven until bubbly. Wonderful way to use leftover turkey. Even people who profess to an aversion to blue cheese love this; don't tell them!
