LUAU PORK AMBROSIA 
5 lb. pork roast
4 jars strained apricots

Marinate pork roast 4 to 5 hours or overnight in following sauce in refrigerator. 1/3 c. honey 1/4 c. lemon juice 1/8 tsp. ginger 1/4 c. soy sauce 1/2 clove garlic, minced 1/8 tsp. pepper 1 sm. onion, chopped

For Charcoal Grill: Coals at grey ash stage. Remove roast from marinate and place on spit for 3 1/2 hours.

For Gas Grill or Rotisserie: Place roast on spit and temperature at 325 degrees.

During last half hour, baste frequently with marinate. Last 5 minutes spread 1 of the remaining jars of apricots on roast. Heat remaining jar apricots with 1 tablespoon lemon juice and use as a gravy.
