YOGURT COTTAGE CHEESE PANCAKES 
3/4 c. plain or vanilla low fat yogurt
1/2 c. low fat cottage cheese
2 eggs or 1/2 c. egg substitute
3/4 c. all purpose flour
1/2 tsp. baking soda
1 tsp. salt, optional
Pinch grated lemon or orange rind, optional

Combine yogurt, cheese and eggs in a blender or food processor. Cover and process until mixture is completely smooth. Stir together flour, baking soda, salt and peel, if using; add to yogurt mixture. Process again only until mixed.

Coat a griddle or large nonstick skillet liberally with cooking spray and set over moderate heat. When hot, add batter to make 10 pancakes. When tops bubble and are nearly dry, turn pancakes over and brown other side.
