ZUCCHINI COOKIES 
1 c. sugar
1/2 c. butter, softened
1 egg
2 c. flour
1 tsp. baking soda
1/2 tsp. cloves
1 tsp. cinnamon
1/2 tsp. salt
1 c. raisins (optional)
1 c. chopped nuts
1 c. grated zucchini

Cream sugar, butter, and egg until fluffy and well blended. Sift dry ingredients together and add to mixture with grated zucchini, blending well. Stir in raisins and nuts. Drop by teaspoonfuls onto greased cookie sheet and bake at 375 degrees for 12-15 minutes or until done. DO NOT OVER BAKE. Makes about 3 dozen cookies.
