CHITTERLINGS 
1 red pepper, cut up
1 clove garlic, minced
1 med. onion, cut up
1/2 lg. green pepper, cut up
2 stalks celery, cut up
10 lbs. chitterlings
1 tbsp. salt
1 tbsp. white pepper

Wash chitterlings thoroughly. Trim fat leaving small amount on chitterlings for seasoning. In large saucepan add chitterlings, red pepper, green pepper, garlic, onion, celery, salt and pepper. Cook until tender, about 5 hours or until done. Drain and cut in serving size pieces.
