MOM'S RICE PUDDING 
1 c. River rice
2 c. water
1 tsp. salt
8 c. milk
3/4 c. sugar

Make rice and cool. In large pan, put milk, cooked rice, salt, sugar and bring to boil. Simmer approximately 1 hour, uncovered, stirring every 10 minutes. The longer it cooks, the thicker it will become and it will continue to do so as it cools.

When complete, add 2 teaspoons vanilla extract. Incorporate well and refrigerate. Can be made a day or 2 ahead.
