After you skin and clean the possum, par boil it for 5 minutes in soda water. Then put the possum in a big covered roasting pan and cover it with water; add carrots, potatoes and onions; bake until the possum is tender, then throw the possum out to the dogs and eat the carrots, potatoes and onions.
