HERBED POTATO SALAD | |
3 med. potatoes (1 lb.) 1/4 c. calorie reduced mayonnaise 1 tbsp. snipped fresh basil or 1 tsp. dried, crushed 1/2 c. frozen peas 1/2 c. low fat plain yogurt 2 tbsp. snipped parsley 1 tbsp. sliced green onions In covered saucepan cook potatoes in boiling water 25-30 minutes; drain. Cube potatoes. In mixing bowl combine yogurt, mayonnaise, parsley, basil and onion. Add potatoes and frozen peas to mayonnaise mixture; stir lightly to coat. Cover; chill several hours. Yield: Serves 4-6. 129 calories per serving. |
