MEATBALLS CON QUESA 
1 1/2 lbs. ground beef
1 1/2 c. fresh bread crumbs
2 tsp. ground cumin
1/3 c. minced onion
1/3 c. milk
3 tbsp. chopped parsley
1 pkg. taco seasoning mix
1/4 tsp. pepper
1 egg
3 tbsp. salad oil
1 lb. process cheese spread, cubed
1 (4 oz.) can green chilies, minced

In medium bowl, mix ground beef, bread crumbs, cumin, onion, milk, parsley, pepper and egg. Shape into 1 inch balls. In 10 inch skillet over medium heat, in hot oil, brown meatballs, a few at a time. Remove as they brown. Spoon off fat and wipe skillet clean.

Into same skillet over low heat, stir cheese, chilies with their liquid, taco seasoning mix and 3/4 cup water until cheese melts. Return meatballs to skillet, cover and simmer until meatballs are heated through, stirring occasionally. Serve with cornbread.

This makes a good party food, kept warm in a chafing dish. It is a favorite of Al's.
