TACO SALSA 
18 c. tomatoes, peeled and chopped
2 c. chopped onions
4 tsp. salt
3-4 c. vinegar
8 cloves garlic, minced
1 jar jalapeno peppers, chopped

Cook tomatoes for 1 1/2 hours over medium heat, stirring often, until most of the liquid is cooked off. Add rest of ingredients and cook for another 1 1/2 hours, stirring often. Pack in jars and process 5 minutes in boiling water bath.
