HARVARD BEETS | |
Large pot of cooked sliced beets 2/3 c. white vinegar 1/3 c. white sugar 1 tbsp. flour or 1 tsp. corn starch pinch of salt Cut off greens. Do not cut too close to beet. It will bleed. Wash beets. Do not cut up. Cook till tender in boiling water, about 30 minutes. Cool. Peel and slice. Put in clean pot. Add about 1-2 cups water. Simmer on low heat to make red liquid. In sauce pan combine sugar, vinegar, flour and pinch of salt. Amount can be doubled. Drain the liquid off simmering liquid into small sauce pan of sugar, vinegar and flour mixture. Simmer stirring constantly until thick. Put red liquid over beets. |
