BRANDIED CORNISH HENS 
6 hens
1 c. finely chopped parsley
1 c. softened butter
1 c. brandy
1 c. currant jelly

Stuff cavities with parsley and butter mixture. Rub hens with rest of butter breast side up in shallow baking pan. Bake at 375 degrees for 30 minutes. Heat jelly and brandy over low heat until jelly melts. Pour over hens (leaving half to baste hens) for 30 minutes more. When done, put under broiler to brown.
