CORNISH HEN STUFFED WITH RICE
(EA)
 
STUFFING:

3 c. cooked rice
1 c. celery, chopped fine
2 tbsp. Lipton's onion soup mix
1/8 lb. butter
3 tbsp. minced parsley
Salt & pepper
Poultry seasoning as desired

This is sufficient for 1 1/2-2 pound hen. Any stuffing leftover, mix with giblets. Place on a sheet of greased aluminum foil. Place hen, rubbed with butter, on top of stuffing, wrap in foil. Bake at 325 degrees for 1 hour. 10 minutes before done, open foil so top can brown.
