MARINATED TOMATOES 
Sliced tomatoes (thick)
1/3 c. olive oil
1/4 c. red wine vinegar
1/4 c. finely chopped onions
2 tbsp. drained capers
2 tbsp. minced fresh parsley
1 tsp. minced garlic (from the jar)
Pinch of salt
1 tsp. dried basil, crumbled
Fresh ground pepper

Arrange tomatoes in single layer in a shallow dish. Mix all other ingredients and spoon over tomatoes. Cover and marinate in refrigerator for 3 hours.
