BAKING POWDER BISCUITS (Dropped
Biscuits)

2 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
4 tbsp. shortening
3/4 c. cold milk

Sift the flour, baking powder and salt together. Cut in the shortening with fork or pastry blender, until the mixture is the consistency of coarse meal. Stir in the milk to make a soft dough. Let stand for about 2 minutes.

Drop dough with a fork on an ungreased baking sheet or baking pan. Bake in hot oven for 15 minutes or until golden brown (oven should be set on 450 degrees). Makes 15 medium biscuits.

Variations:

Sour Cream Biscuits: Use sour cream in place of milk, adding 1/2 teaspoon of soda to the cream before blending with the dry ingredients. Bake at 450 degrees until brown. A somewhat richer biscuit.

Raisins rolled in sugar and cinnamon, dropped in dough just before spooning the dough on baking pan or sheet.

i got a craving for these biscuits and I made them and they are delicious. I just used the plan version, I can't get enough of them. I just pick them apart with my fingers and eat them plain. They are so good!

In the oven so I can't tell you how they turned out but I used the sour cream variation and had to dump in about a half a cup of water or more I don't know I was frustrated because somebody should have probably tested the variation. Anyhow caution if you're doing the sour cream variation course I made a double batch wish me luck.

 Kaufman (Florida) replies:
Everyone said they were good. I doubled the recipe using the variation with the sour cream. There was not enough liquid in the sour cream though I ended up adding about a half a cup of water and it probably could've used more water but sometimes that makes for a tough weird texture. Ended up patting it into a square and cut square biscuits. Baked at 425°F in a 13x9-inch glass pan with butter in the bottom. I think if I had used butter instead of the lard they would've been very similar to KFC tasting biscuits. They had the same soft texture as KFC. They ended up not being drop biscuits as I specified above I cut them into squares.
