Mix ingredients in a large bowl, spoon batter into greased muffin tin and place in oven.

Bake until inside is no longer doughy, and a wooden pick inserted in the center of a muffin comes out clean (about 15-20 minutes).

This recipe is moist, delicious and easily doubled.
