CHILI SAUCE 
20 ripe tomatoes, chopped
8 pears, chopped
8 peaches, chopped
6 onions, chopped
3 sweet red peppers, chopped
2 tbsp. salt
5 c. granulated sugar
1 tsp. cinnamon
2 tbsp. pickling spices, tied in cheesecloth
1 qt. apple cider vinegar

Combine all ingredients and cook until thick, about 2 hours. Cooking time can be greatly reduced by dividing ingredients into several shallow pans, with a depth of not more than 5 inches. Stir frequently, and constantly when mixture begins to thicken. Put into sterilized jars and seal with paraffin.
