MINI CHEESE CAKES 
12 vanilla wafers
2 (8 oz.) cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs
Canned fruit of your choice (pie filling)

Line muffin tin with foil liners. Place 1 wafer at bottom of tin. Mix cream cheese, vanilla and sugar at medium speed until blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 25 minutes at 325 degrees. Cool, and top with fruit. Makes 12.
