ZUCCHINI SOUFFLE | |
6 med. yellow or green squash, cubed 2 slices French bread 1/2 c. milk 1 egg, beaten 1 bunch scallions, chopped 1 tsp. salt 1/8 tsp. pepper 1/2 tsp. dried basil or 2 tbsp. freshly ground nutmeg 1/2 c. bread crumbs 2 tbsp. butter In small amount of water, simmer squash until soft. Drain and mash. Soak bread in milk and mash into squash. Add eggs, scallions and seasonings. Pour into greased 1 1/2 quart casserole. Sprinkle on bread crumbs and dot with butter. Bake at 350 degrees for 35 to 40 minutes. |
