LIVER SAUSAGE SANDWICH 
This is popular for breakfast with the Germans in my area, though it makes an iron-rich lunch, too. Pregnant women traditionally swear by it to get in their weekly liver serving, at least in earlier days... then again, some find it just plain good.

PER SERVING:

liver sausage, sliced 1/4-inch or more thick (3 slices per sandwich)
thin slices of onion (enough to make 1 layer on sandwich)
mayonnaise or salad dressing (optional)
toasted rye or white bread (1 or 2 slices according to desire)

Layer sandwich as follows: 1 slice toast, spread with salad dressing (if used), liver sausage, cut to fit (I find 2 1/2 slices fit on my brand of rye), thin sliced onions, another slice of toast, mayonnaise (if used).

This is also good with untoasted bread, grilled. Some folks like mustard or ketchup instead of mayo.
