LEMON CHIP COOKIES 
1 c. butter, softened
1 egg
1 tbsp. lemon juice
1/4 tsp. baking soda
1 oz. square semi-sweet chocolate, grated (1/3 c.)
1 c. sugar
1 1/2 tsp. shredded lemon peel
2 3/4 c. flour
1/4 tsp. salt
1 tbsp. water

Cream butter and sugar; beat in egg, lemon peel, lemon juice and water. Mix in flour, baking soda and salt. Stir in grated chocolate. Shape into 2 (9") rolls, wrap in waxed paper or clear plastic wrap. Chill thoroughly. Cut into 1/4" slices. Place on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. Makes about 6 dozen.
