APPLE CAKE 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. oil
3 eggs
2 1/4 c. sugar
2 tsp. vanilla
2 c. chopped pecans
3 c. chopped cooking apples
1/2 c. coconut

Mix flour, soda and salt together. Set aside.

Combine oil, eggs, sugar and vanilla. Mix 2 minutes. Add flour mixture. Add pecans, apples and coconut. Bake in greased and floured bundt pan at 350 degrees for 1 hour and 20 minutes. Pour cooled glaze on hot cake.

GLAZE:

1/2 c. brown sugar
1/4 c. milk
1/2 c. butter

Boil 2 minutes. Cool.
