APPLE CAKE 
Grease and flour a tube pan and preheat oven to 350 degrees.

3 eggs
1 1/4 c. oil
2 c. sugar
2 1/2 c. self-rising flour
2 c. apples, peeled, cored & chopped
1 c. coconut
1 c. walnuts or pecans
1 tsp. vanilla
1 tsp. cinnamon

Blend eggs, oil and sugar until creamy. Add flour, a little at a time. Blend well, batter will be stiff. Fold in other ingredients. Pour into greased and floured tube pan and bake for 1 hour or until done.

Top warm cake with the following:

1/2 stick butter
1/2 c. brown sugar
1/3 c. milk

Mix butter, sugar and milk in saucepan. Boil for 3 minutes and pour over cake.
