1 c. flour 1 tsp. baking powder 1/4 tsp. salt 1/2 tbsp. milk 1 c. sugar 1 tbsp. melted butter 3 eggs Sift flour and baking powder together. Beat eggs well. Then, while still beating, gradually add sugar, then the flour-baking powder mixture, salt and milk. Then add the butter. Spread the batter evenly in a well-greased flat pan (ours measures 11 x 17 x 3/4 inches). Bake at 375 degrees for 20 minutes. After baking, loosen the edges of the cake from the pan and dump it onto a towel. Quickly spread a layer of jelly over the whole cake and roll the narrow side over the jelly. This must be completed before the cake cools to prevent its splitting. There were no thermometers on coal ranges. Mother called the temperature "moderate". |
