JELLY ROLL 
1 c. sugar
3 eggs (well beaten)
5 tbsp. water
1 tsp. lemon or vanilla extract
1 c. sifted all purpose flour
1 tsp. baking powder
1/4 tsp. salt
Powdered sugar
1 (12 oz.) jar jelly or jam

Gradually add sugar to eggs, beating constantly. Add water and extract. Mix well. Sift dry ingredients together, except powdered sugar. Add all at once to egg mixture. Beating just until smooth. Spread evenly in well oiled (or lined with waxed paper) 15 1/2 x 10 1/2 inch pan. Bake in 375 degree oven for 20 minutes or until done. Remove from oven. Loosen edges of cake from pan. Quickly invert on a large towel sprinkled with powdered sugar. Beginning at wide edge roll up cake. Wrap in towel and cool. Unroll and spread with jelly evenly across. Reroll. Makes 15 servings. Or fill with berries and cream or pudding or ice cream.
