MASHED POTATO CANDY 
2 med. potatoes
4 tbsp. butter
2 lbs. powdered sugar
1/2 lb. coconut
4 sq. sweet chocolate melted (or 6 oz. chips)
2 tsp. vanilla

Boil potatoes. Drain and mash, add butter, coconut, vanilla and powdered sugar. Beat until creamy (this should be kind of thick). Pour into buttered 9 x 13 pan and cool. When hard, pour the melted chocolate over the top. Spread. After 2 hours of cooling, cut into squares.
