MANICOTTI 
8 eggs
3 c. water
1 tsp. salt
2 c. flour
3 lbs. ricotta cheese
1/2 lb. mozzarella cheese, grated
3 eggs
1 c. Parmesan cheese
Dash of salt
Pepper and parsley

For crepes, beat 8 eggs and water with mixer. Add salt and flour; beat until smooth. Drop by tablespoons in small frying pan. Mix remaining ingredients together with mixer to make filling. Put some spaghetti sauce in bottom of 9 x 13 inch baking dish. Put about 2 tbsp. filling into each crepe and roll it up. Lay them in rows in dish. When pan is full, spread some sauce on top and sprinkle with mozzarella cheese. Bake 30 minutes until bubbly at 350 degrees. Cover with tin foil.
