ONE HUNDRED PERCENT WHOLE WHEAT BREAD | |
3 c. milk 3 tbsp. oil 1 tbsp. salt 3/4 c. honey 2 tbsp. active dry yeast 1/4 c. lukewarm water 5-7 c. whole wheat flour Combine in a saucepan milk, oil, salt and honey. Heat until blended (approximately 110 degrees). Dissolve yeast in 1/4 cup lukewarm water (I use the cup I measure the honey in). Pour liquid into large mixing bowl and add yeast. Add 3 cups of whole wheat flour and beat with electric mixer for 5 minutes at high speed to develop the gluten. Stir in remaining flour and turn onto a floured board. Knead thoroughly until dough is smooth and elastic. Turn into an oiled bowl, cover with damp cloth and let rise in warm place about one hour. Punch down when dough had doubled and let rise again. Punch down and form into two loaves, place into well greased bread pans and let rise about 45 minutes. Bake at 350 degrees for about 45 minutes. |
