LAZY DAISY OATMEAL CAKE | |
1 1/4 c. boiling water 1 c. Quaker Oats (either quick or old fashioned) 1/2 c. butter, softened 1 c. sugar 1 c. firmly packed brown sugar 1 tsp. vanilla 2 eggs 1 1/2 c. sifted all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 3/4 tsp. cinnamon 1/4 tsp. nutmeg Pour boiling water over oats and let stand 20 minutes. Beat butter until creamy and gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oats mixture; mix well. Sift together flour, soda, salt, nutmeg and cinnamon. Add to creamed mixture. Pour batter into well greased and floured 9 inch pan. Bake at 350 degrees in a preheated oven for 50 to 55 minutes. Do not remove cake from pan. Makes one 9 inch cake. LAZY DAISY FROSTING: 1/4 c. butter, melted 1/2 c. firmly packed brown sugar 3 tbsp. half and half cream 1/3 c. chopped nutmeats 3/4 c. shredded or flaked coconut Combine all ingredients. Spread evenly over cake. Broil until frosting becomes bubbly. Cake may be served warm or cold. |
